  • 1 tablespoon Orange juice

  • 2 tablespoons Olive oil

  • 1 tablespoon Soy sauce or tamari

  • 1 teaspoon Chili powder

  • 1 teaspoon Cumin

  • 1/2 teaspoon Smoked paprika

  • 2 cloves Garlic, minced

  • 1/2 teaspoon Onion powder

  • 1/2 teaspoon Dried oregano

  • 1/2 teaspoon, or to taste Salt

  • 1/4 teaspoon, or to taste Black pepper

  • 8 Large flour tortillas

  • 2 cups Shredded Monterey Jack or cheddar cheese

  • 1 tablespoon Vegetable oil (for cooking)

  • Optional Fresh cilantro, chopped (for garnish)

  • Optional Sour cream or guacamole (for serving)

Directions

  • Pat the flank or skirt steak dry with paper towels. Slice it thinly against the grain. Set aside.
